Renowned French chef Ludo Lefebvre is set to return to Costa Palmas this summer for an exciting culinary experience at the Delphine Day Club. Costa Palmas, Mexico – Renowned French chef Ludo Lefebvre is returning to the Delphine Day Club in Costa Palmas for a second summer, promising an exciting culinary experience for locals and visitors. Lefebvre, a prominent figure in the culinary world, is known for his innovative approach and has made significant contributions to the pop-up dining trend.
Lefebvre, a classically-trained chef, gained fame in Los Angeles with his LudoTruck in 2010, introducing a mobile fried chicken concept that captivated food lovers. His success led to the opening of LudoBird inside the Staples Center, followed by the establishment of Trois Mec in Hollywood in 2013, in partnership with Vinny Dotolo and John Shook. The following year, he expanded his offerings by opening Petit Trois, a French bistro adjacent to Trois Mec, and later established another location in Sherman Oaks in 2018. Lefebvre’s culinary excellence has earned him various accolades, including a Michelin star and a prestigious James Beard Award.
Last summer marked Lefebvre’s inaugural collaboration with the Delphine Day Club at Costa Palmas, where he served Niçoise cuisine, enhanced by a vibrant atmosphere featuring lively DJ music. As the new summer season approaches, Lefebvre is excited to share some of his favorite Mexican dishes from Los Angeles, showcasing his appreciation for local flavors.
Among his favorite dining spots is Casa Vega in Sherman Oaks, celebrated for its table-side guacamole and exceptional margaritas. Additionally, Lefebvre recommends Guelaguetza in Koreatown for its authentic Oaxacan food, especially the traditional moles enjoyed with chapulines. Another highlight on his list is Prawns a la Parrilla, an exquisite dish served at Damian Restaurant, crafted by Michelin-starred chef Enrique Olvera.
Chef Lefebvre’s culinary influence extends beyond Costa Palmas with the upcoming A Taste of Thompson Chef Series, initiated by Hyatt Hotels Corporation. This series, set to take place between December 2024 and early 2025 at various Thompson Hotels locations, will feature exclusive dining events and digital content. Lefebvre is slated to participate alongside other notable chefs like Quentin Garcia and Enrique Olvera.
One of the series highlights is Chef Lefebvre’s dining experience scheduled at Thompson Denver’s Chez Maggy on December 10, 2024. Following him, Chef Garcia will be hosting an event at Thompson Palm Springs’ Lola Rose Grand Mezze on January 15, 2025. Chef Olvera will close out the series with an event at Manta restaurant, situated within The Cape, a Thompson Hotel in Cabo San Lucas, in early 2025. Each event will feature tailored multi-course meals that reflect the chefs’ unique culinary visions and stories.
